What is Insulin

Insulin is a hormone that is responsible for breaking down carbohydrates, and is used in a few other metabolic processes. When you intake certain carbohydrates, ether low or high GI (Glycemic Index explained here), your body needs to provide insulin for the metabolic process. When you consume HIGH GI CARBOHYDRATES you body must provide a large amount of insulin to break it down, (remember – the higher the GI, the quicker your body breaks down the carbohydrates) resulting in an INSULIN SPIKE. When you consume LOW GI CARBOHYDRATES your body releases a slower, much more steady flow of insulin.
Every heard of a sugar crash? When you consume High GI carbs, the insulin is rapidly breaking down the carbs, causing you blood sugar levels to suddenly drop. This will leave you with very low energy, and probably hungry again.
